Hibiscus Extract - Flavor, Food Color and Herbal Remedy

Hibiscus Extract (Hibiscus sabdariifa), which is made from the dried sepals/calyces of the plant is one of the few extracts  used as a flavor, food color and herbal remedy.  

Hibiscus has a tart cranberry-like flavor.  Throughout Latin America “Jamaica”, which is  made directly from the calyces or from the extract it is a popular beverage.  Hibiscus Tea is also very popular.  Both are rich in vitamin C and contain many of the same compounds found in red wine such as flavonoids, polyphenols and anthocyanins.  Research has shown these compounds  prevent oxidation of low lensity lipoproteins (LDL) or bad cholesterol. 

In many parts of the world the extract and the dried calyces are used in traditional medicine.  The extract and infusions of the leaves are regarded as diuretic, cholerectic, febrifugal and hypertensive, decreasing the viscosity of the blood and stimuating intestinal peristalsis. 

Hibiscus Extarct is dark red in color and  can be used as a natural red  food color in any  water based product.  As a result of the intensity of its color, it will not impart flavor at the typical levels of use.

Better Tasting Cinnamon Extract

Silver Cloud Estates, LLC has introduced a better tasting Cinnamon Extract for baking, beverages and ice cream.  This extract does not taste like “red hot” candy, but rather like ground spice.  The extract contains propylene glycol, alcohol, water and extractives of cinnamon (Cinnamomum burmanii Blume).  This particular quality of cinnamon grows on the slopes of Mt. Korintje in Indonesia and many consider it the finest of the  many spieces of cassia/cinnamon.  It has an intensely sweet, somewhat floral flavor and aroma.  These flavor characteristics are readily evident in the extract. 

Silver Cloud is also now selling spices and herbs and offers Cinnamon Saigon (Cinnamomum loureirii Nees).  Indigenous to Vietnam, this Cinnamon, which at one time was favored by consumers in the United States, disappeared as a result of the Vietnam War and is now slowly making a resurgence.Silver Cloud offers the spice  in  sticks (quills) and ground.

Almond Extract - Imitaton or Pure which should I use?

Pure Almond Extract is a concentrated flavoring made from Water, Alcohol and Pure Oil Bitter Almond.   It is used as a flavoring in many recipes, especially cakes and pastries.   The primary component in Oil Bitter Almond is Benzaldehyde.  Imitation Almond Extract can be identical to Pure Almond Extract in flavor and aroma.   It  typically also contains Water, Alcohol and an Artificial or Imitation Flavor.  This flavor is usually just the chemical Benzaldehyde. 

Bitter Almond oil is produced from one of the two forms of the Almond tree (Prunus dulcis, syn. Prunus amygdalus, or Amygdalus communis), which is a small deciduous tree native to Southwest Asia.  There are two forms of the plant, one (often with white flowers) producing sweet almonds, and the other (often with pink flowers) producing bitter almonds.

As well as a fixed oil, bitter almonds contain an emulsion which, in the presence of water, acts on a soluble glucoside, amygdalin, yielding glucose cyanide and the essential oil of bitter almonds or benzaldehyde.  Great care needs to be taken when producing the oil since bitter almonds may yield from 6 to 8% of hydrogen cyanide.  Oil Bitter Almond has an intensely sweet flavor. Most consumers think cherries when they smell the oil, since benzaldehyde is also the primary flavor ingredient used in cherry flavors.

It is best to purchase only enough Pure Almond Extract or Imitation Almond Extract to last a year.  Benzaldehyde (both the chemical and the Oil Bitter Almond) is an unstable chemical that oxidizes quickly.  For this reason and due to evaporation of the alcohol, it is important to keep the bottles tightly closed.  It is also important that these extract be stored in colored glass bottles in a cool dark place.  This helps retard the oxidation process.  

Many consumers believe all almond extracts are the same and typically decide, which to purchase based on price.  There is no government regulation, however, of how much Benzaldehyde or Oil Bitter Almond the extracts contain.  As a result, the strength of the extracts can vary greatly.  Many inexpensive extracts  contain very little Benzaldehyde or Oil Bitter Almond and are weak.

Orange Extract - Great Birthday Cake Recipe.

This delicious festive orange-flavored birthday cake recipe was recently posted on the Silver Cloud Estates website.  This recipe is very adaptable and lemon or vanilla  extracts can be substituted for the orange extract.  Milk can also be used in lieu of orange juice in the frosting.   This cake will serve 12.

    Cake

  • 3/4 (1 1/2 sticks) butter, softened
  • 1 1/2 cups cane sugar
  • 2 teaspoons Silver Cloud - Orange Extract
  • 3 eggs
  • 3 cups white flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1 cup milk
  • Frosting
  • 1 stick  butter. softened
  • 2 cups powdered sugar
  • 2 tablespoons orange juice
  • 1 teaspoon Silver Cloud - Orange Extract
  • Grated rind of one organic orange

    Optional ingredients for decorating (select any)

  • Food colorings
  • Roasted walnuts
  • Roasted pecans
  • Bits of  Silver Cloud - Crystallized Ginger
  • Dried cranberries or cherries
  • Dried cherries
  • Shaved chocolate

Preheat oven to 350°F. Butter (or spray) and flour 2 8-inch round cake pans. Set aside. Cream the butter and sugar with an electric mixer or wire whisk until light and fluffy. Add orange extract and eggs, beating well. In a separate bowl, mix the flour, baking powder, and salt. Add flour mixture a bit at a time, alternating with additions of the milk, beating well. Batter will be thick and fluffy. Pour evenly into prepared pans. Bake the cake for 40 to 45 minutes or until done when tested with a toothpick. Cool in pans for 15 minutes then transfer to racks until completely cooled. Frost when cooled.

To make frosting, cream softened butter in a mixing bowl. Sift in the powdered sugar and add orange juice, orange extract, and grated orange rind. Blend completely adding more powdered sugar or orange juice as desired.

Floral Extracts - Great for Cooking, Ice Cream and Beverages

Floral Extracts such as Rose, Lavender, Orange Blossom and Jasmine are wonderful additions to any pantry.  These extracts can be used in a wide range of culinary applications.

Silver Cloud Estates offers a complete line of pure floral extracts made using the finest quality essential oils.  All of these extracts can be used in beverages, cooking and ice cream. 

Beverages:

Floral Extracts can be used in many beverages.  Rose, Lavender, Jasmine and Orange Blossom are wonderful in tea.  They can be applied to the leaves or added after the tea has been brewed.  A few drops of Pure Lavender Extract or Pure Jasmine Extract enhances lemonade too.  The next time you have a lunch or dinner party add a few drops Pure Lavender, Rose , Orange Blossom, Jasmine and a lemon slice to the water on your table.  Floral scented water is refreshing and is very elegant.  Our extracts will not cloud the water. 

Sauces: 

Wine reduced sauces for meat and poultry can be enhanced using floral extracts.  Lavender extract has a wonderful, sweet, floral flavor, which compliments most sauces very nicely.  If your recipe calls for rosemary or you think rosemary would work in the recipe, try lavender extract.  I have also had great success using  jasmine extract.  The honeysuckle notes of jasmine compliment mostpoultry and pork dishes.  I typically add extracts to sauces at the very end. 

Baking:

Jasmine, orange blossom and lavender compliment chocolate very well.  I have used all three extracts in chocolate cake and typically add 1  teaspoon to 3 cups of chocolate cake mix. I have also used them in chocolate puddings.  I often use the orange blossom extract in conjunction with orange extract in cake and cookie recipes.  I replace 1/2 the orange called for in a recipe with orange blossom. 

Ice Cream:

Rose, Lavender, Orange Blossom and Jasmine can all be used in ice cream.  I typically use them with vanilla extract and replace 1/2 the vanilla extract with the floral extract.  Vanilla blends well with almost anything and you should not hesitate to experiment.  All of these extracts are great in chocolate ice cream too.

Hard to Find Pistachio Extract Now Available.

Pistachio Extract has become very difficult to find especially as a natural flavor.  Silver Cloud Estates has recently started offering Pistachio extract in 4 ounce, 8 ounce and 1 quart bottles.  This flavor can be used in beverages, baking and ice cream. It is also wonderful when added to coffee and whipped cream toppings.  

I often use Pistachio extract as a substitute for Pure Vanilla Extract.  Its rich and nutty flavor complements many cookie and cake recipes.   Silver Cloud also offers Pecan, Butter Pecan, Black Walnut and Hazelnut extracts.  They have also announced they will begin offering Macadamia extract before the Christmas Holiday.

Black Currant (Cassis) Extract for Beverages, Baking and Cooking.

 Black Currant (Ribes nigrum) is a species of Ribes berry native to Northern Europe and Northern Asia. The berries have a wonderful, slightly astringent, sweet flavor.  While Black Currant is one of the more popular flavors in Europe, it is almost impossible to find this flavor or extract in the United States.   

Silver Cloud Estates has recently begun offering Black Currant, Natural Flavor Blend in 4 ounce and 1 Quart bottles.  This delicious and verstaile extract can be used in both sweet and savory cooking applications.  It is excellent when added to lemonade, tea, cookies, cake,  brownies, fruit salad, ice cream and sorbet.  The extract can also be used in sauces for meat, poultry and game or anywhere you would typically used either a berry or grape flavor.  Black Currant  is also wonderful when used to flavor alcohol, such as beer, vodka and wine.  My kids love syrup made Silver Cloud’s Black Currant flavor  on pancakes, waffles and ice cream.

Multiple uses for Pure Lavender Extract

 Pure Lavender Extract can be used in dozens of cooking and baking applications.  Finding this verstail extract, however, is not easy.  It is rarely sold in supermarkets or specialty gourmet shops.  Silver Cloud Estates offers this extract and it can be ordered from their website at www.silvercloudestates.com.

One of my favorite uses for Pure Lavender Extract is in lemonade.  The addition of a few drops to a pitcher adds a very nice floral note.  It is also excellent in tea.  When flavoring tea,  you never want the lavender to overpower the tea and its important not to add too much. 

I often use Pure Lavender Extract when cooking.  It is excellent in wine reduced sauces especially for beef and lamb.  Lavender  (both the extract and the herb) can be used in lieu of rosemary or in combination with rosemary in many recipes.  The camphor and eucalyptol notes in the rosemary blend very well with the linalool and linalyl acetate notes in the lavender.    Perfumers recognize this and often use lavender and rosemary together in fragrance compositions. 

Add a teaspoon or two of Pure Lavender Extract to your favorite chocolate brownie or chocolate cake recipe.  When serving this dessert, ask your family and friends if they can identify the delicious flavor?  Everyone is usually surprised when you tell them its lavender.  It works equally well with chocolate ice cream too. 

I also use Pure Lavender extract for a fragrance.  Its is great when you want to enhance the fragrance of potpourri, sachets and floral bouquets.  You can also place just one drop on the top of a light buld and when you turn on the lamp the room will be filled with the wonderful aroma of lavender.  Be careful that you only use one drop and you place it on the bulb before you turn on the light.   Besides being very pleasant, the aroma of lavender is very calming and soothing.  Its important, however, to use a pure extract to enjoy these benefits.
